An evening of wine and chocolate
The room was beautiful at Spectrum on One in Fairmont Dubai, with every surface covered with chocolate-themed decorations and the stunning wine room as a backdrop. Fairmont Dubai’s Executive pastry chef, Muhammad Jenjen, introduced a range of gourmet chocolates that he had designed especially for this event and Tony Dodds, MMI’s Head of Wine, took us through the wines. Tony said it was an evening for “experimentation” and we tried six very different wines seeing how they tasted before, during and after eating the chocolate.
The special chocolates ranged from milk with a raspberry filling to white chocolate and pistachio, plus there were little bowls of the raw gourmet chocolate to sample too. [yellow tail] Bubbles rosé got us off to a good start.
The challenges of matching chocolate and wine were explored including dry reds with this favourite dessert ingredient. The room was divided, some people loved the combination of Cabernet Sauvignon (Marques de Casa Concha) with Maracaibo 65% – “the best chocolate in the world” according to MJ – others preferred a more classic sweet pairing like the unusual Terra Vinyas red dessert wine from Michel Chapoutier with Centenario bitter 70%. We all agreed it was fun trying.
